Collagen Protein Lime Bliss Balls
Ingredients (makes ~20–24 balls):
- 120g macadamia or cashew nuts (or seeds for a nut-free option)
- 60g shredded coconut (plus extra for rolling)
- 10 Medjool dates
- 2 tbsp Go Bomb (collagen)
- 1 tsp vanilla bean paste
- Juice of 1 lime
- Zest of 1 lime (add more if desired)
Method (Food processor):
- Add all ingredients to a food processor.
- Blend on high until a dough forms.
- Transfer mixture onto a plate.
- Roll into small balls (~1 tbsp each).
- Roll in extra shredded coconut if desired.
- Place into an airtight container and refrigerate to firm.
